  • 1/4 cup Toasted pumpkin seeds For garnish
  • 1 tbsp Chili oil Optional for garnish
For the Garlic Herb Mushroom Wellington
  • 2 cups Mixed mushrooms Chopped
  • 1 medium Onion Chopped
  • 2 cloves Garlic Minced
  • 1 tbsp Fresh thyme
  • 1 tbsp Fresh rosemary
  • 2 cups Spinach Wilted
  • 2 tbsp Soy sauce
  • 1 tbsp Dijon mustard
  • 1 sheet Puff pastry Thawed
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Dairy free milk For brushing
For the Crispy Smashed Potatoes
  • 2 lbs Baby potatoes Boiled until tender
  • 1/4 cup Olive oil For drizzling
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Garlic powder
  • 2 tbsp Chopped rosemary
  • 1 lemon Zest For finishing
  • 1 tbsp Lemon juice For finishing
For the Silky Dark Chocolate Pots
  • 200 g Dark chocolate Melted
  • 1/2 cup Coconut milk
  • 2 tbsp Maple syrup
  • 1/4 cup Crushed candy cane For topping
  • 1/2 tsp Flaky sea salt For topping

Creamy Roasted Pumpkin Soup Preparation
  1. Roast pumpkin or butternut squash until caramelized and soft.
  2. Blend with vegetable broth, coconut milk, and apple cider vinegar until smooth.
  3. Serve hot with a swirl of coconut cream and toasted pumpkin seeds on top.
Garlic Herb Mushroom Wellington Preparation
  1. Sauté onions until sweet, then add mushrooms and cook down until nearly dry.
  2. Stir in garlic, thyme, rosemary, soy sauce, and Dijon mustard.
  3. Wilt in spinach and allow mixture to cool.
  4. Roll out puff pastry, brush with mustard, and pile filling in the center.
  5. Wrap the pastry like a present, seal edges, brush with dairy-free milk, and score the top.
  6. Bake at 400°F until golden and crisp.
Crispy Smashed Potatoes Preparation
  1. Boil baby potatoes until tender, then pat dry.
  2. Press gently with a glass to flatten the potatoes.
  3. Drizzle with olive oil, salt, pepper, garlic powder, and chopped rosemary.
  4. Roast until edges are frilly and crisp.
  5. Finish with lemon zest and a squeeze of juice.
Silky Dark Chocolate Pots Preparation
  1. Melt dark chocolate with coconut milk and maple syrup until glossy.
