Ingrédients
  

For the salmon
  • 4 fillets salmon fillets, about 5 ounces each
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest plus lemon wedges for serving
For the vegetables
  • 1 pound baby broccoli or green beans
  • to taste Salt and pepper

Method
 

Preparation
  1. Heat the oven to 425°F and line a sheet pan with parchment.
  2. Whisk together the mustard, honey, olive oil, lemon zest, a pinch of salt, and pepper.
  3. Place the salmon on the pan. Toss the veggies with a little olive oil, salt, and pepper, and scatter them around the fish.
  4. Brush the honey mustard sauce on the salmon and roast for 10 to 12 minutes until the salmon flakes easily and the veggies are crisp-tender.
  5. Finish with lemon wedges and a sprinkle of chopped parsley if desired.

Notes

If the vegetables need more time, remove the salmon when finished and keep the veggies in the oven for a few more minutes.
