Preparation
- Heat the oven to 425°F and line a sheet pan with parchment.
- Whisk together the mustard, honey, olive oil, lemon zest, a pinch of salt, and pepper.
- Place the salmon on the pan. Toss the veggies with a little olive oil, salt, and pepper, and scatter them around the fish.
- Brush the honey mustard sauce on the salmon and roast for 10 to 12 minutes until the salmon flakes easily and the veggies are crisp-tender.
- Finish with lemon wedges and a sprinkle of chopped parsley if desired.
Notes
If the vegetables need more time, remove the salmon when finished and keep the veggies in the oven for a few more minutes.
