  • 1 cup granulated sugar
  • 1 stick unsalted butter, softened
  • 2 large eggs, room temperature
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoons baking soda
  • 0.25 teaspoons fine salt
  • 0.75 cups whole milk, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 zest of 1 lemon or 1/3 cup mini chocolate chips (optional) optional for extra flavor

Method
 

Preparation
  1. Heat oven to 350°F (175°C). Grease an 8-inch square pan and line with parchment for easy lift-out.
  2. In a large bowl, beat butter and sugar until pale and fluffy. A whisk works fine, a mixer is faster.
  3. Whisk in eggs one at a time, then vanilla.
  4. Sprinkle flour, baking powder, baking soda, and salt over the bowl. Add milk. Stir gently until just combined. Do not overmix.
  5. Fold in zest or chips if using. Spread batter into the pan. Tap once to release bubbles.
Baking
  1. Bake for 24 to 30 minutes until the top springs back and a toothpick comes out clean or with a few moist crumbs.
  2. Cool for 15 minutes, then frost or dust with powdered sugar. Slice and enjoy warm or at room temperature.

Notes

For best results, measure flour lightly to avoid a dense cake. It can be made ahead and freezes well without frosting. Room temperature ingredients lead to a creamier batter.
