  • 2-3 eggs per person

  • 1 tablespoon olive oil

  • 1 whole grain English muffin
  • 1 fluffy egg
  • 1 slice tomato
  • 1 handful spinach or arugula

Method
 

Banana Baked Oatmeal
  1. Heat oven to 350°F and grease an 8x8 dish.
  2. In a bowl, whisk together milk, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt.
  3. Stir in oats and mashed bananas. Add nuts or chocolate if using.
  4. Pour into the dish and bake for 30 to 35 minutes, until set and lightly golden.
  5. Let it cool for 10 minutes before slicing. Serve warm or cold.
Breakfast Vegetable Scramble
  1. Sauté your chosen veggies in olive oil with a pinch of salt until tender.
  2. Beat the eggs well with a pinch of salt, then pour them into the pan.
  3. Stir gently until soft curds form, ensuring to cook on low heat for fluffy eggs.
Healthy Breakfast Sandwich
  1. Toast the English muffin.
  2. Scramble or fry an egg.
  3. Layer with tomato, spinach or arugula, and avocado or hummus.
  4. If desired, add turkey bacon or smoked salmon and hot sauce.
