  • 1 pound Ground beef Use 85% lean for best flavor
  • 1 Chopped onion Add for flavor
  • 2 cloves Garlic, minced Fresh is best
  • 1 packet Taco seasoning or homemade mix Use according to taste
  • 1 small can Diced tomatoes with green chiles Adds acidity and flavor
  • 1 cup Corn Frozen or canned
  • ½ cup Black beans Optional, can use canned
  • 1 cup Shredded cheddar cheese For topping
  • ½ cup Fresh cilantro Garnish
  • 1 lime Squeezed For finishing touch

Method
 

Preparation
  1. Brown the ground beef in a large skillet with a pinch of salt until it's no longer pink.
  2. Add chopped onion, garlic, and the taco seasoning. Stir until fragrant.
  3. Pour in the diced tomatoes with chiles, corn, and black beans. Simmer for a few minutes.
  4. Top with shredded cheddar and cover for 2 minutes until melted.
  5. Garnish with fresh cilantro and a squeeze of lime before serving.

Notes

Serve in bowls with rice, in tortillas, or over crunchy chips. For extra heat, add chopped jalapeño.
