  • 3 tablespoons Lemon olive oil dressing Or to taste
Mediterranean Tuna Boxes
  • 1 can Tuna Mixed with Greek yogurt, mustard, lemon zest, and capers
  • 1 cup Cucumber sticks
  • 1 cup Pita wedges
  • 1 cup Arugula
Turkey Pesto Pasta
  • 2 cups Cooked short pasta
  • 1/2 cup Pesto
  • 1 cup Baby spinach
  • 1 cup Roasted red peppers Chopped
  • 1 cup Sliced turkey Or any preferred protein
Caprese Quinoa
  • 1 cup Quinoa Cooked
  • 1/2 cup Mozzarella pearls
  • 1 cup Tomatoes Halved
  • 1/4 cup Fresh basil Chopped
  • 2 tablespoons Balsamic vinegar For drizzling
  • 2 tablespoons Olive oil For drizzling

Method
 

Preparation
  1. Prepare the Chickpea Crunch Salad by combining all ingredients in a bowl and mixing well.
  2. For the Mediterranean Tuna Boxes, mix tuna with Greek yogurt, mustard, lemon zest, and capers, then pack with cucumber sticks, pita wedges, and arugula.
  3. For the Turkey Pesto Pasta, toss cooked short pasta with pesto, baby spinach, roasted red peppers, and sliced turkey.
  4. For the Caprese Quinoa, combine cooked quinoa with mozzarella, tomatoes, basil, and drizzle with balsamic and olive oil.
