  • 1.5 pounds chicken cutlets or thin-sliced breasts Boneless for easy cooking.
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika or Italian seasoning Choose based on preference.
  • 5 cloves garlic, minced Go big, it’s worth it.
  • 1 cup chicken broth
  • 0.5 cup heavy cream Can substitute with half-and-half.
  • 1 teaspoon Dijon mustard
  • 0.5 cup grated Parmesan Can substitute with another hard cheese.
  • to taste Fresh parsley or chives for finishing Chopped for garnish.

Method
 

Preparation
  1. Season the chicken on both sides with salt, pepper, and paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat until shimmering.
  3. Add chicken and cook until golden on both sides and cooked through. Remove chicken to a plate and tent loosely.
  4. Lower heat to medium, add minced garlic and stir until fragrant, about 30 seconds.
Cooking
  1. Pour in chicken broth and stir, scraping up caramelized bits. Let bubble for 2 minutes to reduce slightly.
  2. Stir in cream and Dijon. Simmer gently until slightly thickened, about 3 to 5 minutes.
  3. Sprinkle in Parmesan and stir until smooth.
  4. Return chicken to the pan and spoon sauce over the top. Simmer for 1 to 2 minutes to warm through.
  5. Finish with chopped parsley and serve hot.

Notes

Pro tip: If the sauce gets too thick, add a splash of extra broth or water. If it’s too thin, let it simmer another minute or two.
