Preparation
- Season the chicken on both sides with salt, pepper, and paprika.
- Heat olive oil and butter in a large skillet over medium-high heat until shimmering.
- Add chicken and cook until golden on both sides and cooked through. Remove chicken to a plate and tent loosely.
- Lower heat to medium, add minced garlic and stir until fragrant, about 30 seconds.
Cooking
- Pour in chicken broth and stir, scraping up caramelized bits. Let bubble for 2 minutes to reduce slightly.
- Stir in cream and Dijon. Simmer gently until slightly thickened, about 3 to 5 minutes.
- Sprinkle in Parmesan and stir until smooth.
- Return chicken to the pan and spoon sauce over the top. Simmer for 1 to 2 minutes to warm through.
- Finish with chopped parsley and serve hot.
Notes
Pro tip: If the sauce gets too thick, add a splash of extra broth or water. If it’s too thin, let it simmer another minute or two.
