  • 3 to 4 cups veggies (potatoes, squash, broccoli, greens, mushrooms)
  • 1 to 2 teaspoons seasoning (salt, pepper, Italian herbs, chili powder) Add as preferred
  • to taste Acid to finish (lemon juice, vinegar)
  • optional cream, coconut milk, or yogurt For creaminess

Method
 

Preparation
  1. Warm oil in a pot over medium heat.
  2. Sauté onion, carrot, and celery with a pinch of salt until soft and fragrant.
  3. Add garlic and cook for 30 seconds.
  4. Stir in spices or tomato paste if using.
Cooking
  1. Pour in broth, add protein and veggies. Bring to a simmer.
  2. Cook until veggies are tender.
  3. Taste and adjust salt as needed.
Finishing
  1. Finish with acid and optional creaminess. Add fresh herbs.
  2. Serve hot with toppings.
