  • 1 tsp baking soda
  • 1 tsp fine salt
  • 3/4 cup unsalted butter, melted and cooled
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 1 1/2 to 2 cups chocolate chips
  • flaky salt for topping, optional

Preparation
  1. Whisk together the flour, baking soda, and salt in a bowl.
  2. In another bowl, stir the melted butter, brown sugar, and white sugar until glossy.
  3. Add the egg, egg yolk, and vanilla, mixing until well combined.
  4. Fold in the dry ingredients, then add the chocolate chips.
  5. Cover the bowl and chill the dough for 45 to 60 minutes.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Scoop large balls of dough (about 1/4 cup each) onto a lined baking sheet.
  3. Press a few extra chocolate chips on top before baking.
  4. Bake for 10 to 12 minutes until the edges are set but the centers look slightly pale.
  5. Sprinkle with flaky salt and let cool on the sheet for 10 minutes to achieve a thick and chewy texture.

Notes

Melted butter creates a chewy center, and the extra egg yolk keeps the cookies plush. Freezing the dough in scoops allows for baking straight from frozen, adding a minute or two to the baking time.
