Burger Patties
  • 1 pound Ground beef, 80/20 For the best balance of juiciness and flavor
  • 1 teaspoon Kosher salt Add just before cooking
  • 1/2 teaspoon Freshly cracked black pepper Add just before cooking
  • 1 tablespoon Worcestershire sauce For extra savory depth
  • 1/2 teaspoon Garlic powder For flavor
  • 1/2 teaspoon Onion powder For flavor
  • 4 pieces Brioche or potato buns Lightly buttered
  • 4 slices Cheddar or American cheese For topping
  • 1 cup Pickles For serving
  • 1 medium Tomato Thinly sliced, for serving
  • 1 cup Crisp lettuce For serving
  • 1 small Red onion For serving
  • 1 tablespoon Neutral oil For the pan or to brush the grill grates
  • 1/2 cup BBQ sauce Your favorite kind

Method
 

Preparation
  1. Start with cold beef so it holds its shape. In a bowl, sprinkle salt, pepper, Worcestershire sauce, and garlic powder. Mix gently to avoid overmixing.
  2. Divide the mixture into equal balls and press into patties about 3/4 inch thick, making a small dimple in the center.
  3. Chill the patties for 15 minutes while preheating your grill or skillet.
  4. Prep your toppings: slice tomatoes, rinse lettuce, and butter buns for toasting later.
Cooking
  1. For grilling: Preheat your grill, clean, and oil the grates. Grill patties over medium-high heat for 3-4 minutes on each side.
  2. During the last minute, brush each patty with BBQ sauce, flip, and add cheese on top. Toast buns on the coolest part of the grill.
  3. For stovetop cooking: Heat oil in a skillet over medium-high. Cook patties for 3-4 minutes on each side, then brush with BBQ sauce and add cheese.
  4. Toast the buns in the same skillet until golden.
Assembly
  1. Assemble the burgers by stacking the patties with pickles, tomato, lettuce, and red onion.
  2. Brush the top bun lightly with sauce before placing it on top.

Notes

To store leftovers, keep patties and buns separately. Wrap patties in foil and refrigerate for up to 3 days or freeze for up to 2 months. Reheat in a skillet for best results.
