  • 3 pcs very ripe bananas, mashed until mostly smooth
  • 1 large egg, room temperature
  • 1/3 cup melted unsalted butter or neutral oil
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar for flavor and moisture
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1 teaspoon vanilla extract
Optional Add-Ins
  • 1/2 cup chopped walnuts, chocolate chips, or shredded coconut Choose according to your preference

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9 by 5 inch loaf pan or line it with parchment.
  2. In a mixing bowl, whisk the mashed bananas, egg, melted butter, sugars, and vanilla until well combined.
  3. In another bowl, stir together flour, baking soda, and salt. Add this dry mixture to the wet ingredients and fold gently with a spatula.
  4. Fold in optional add-ins if using.
  5. Pour into the prepared pan and smooth the top.
Baking
  1. Bake for 50 to 60 minutes, checking for doneness at 50 minutes. A toothpick should come out with just a few moist crumbs.
  2. Cool in the pan for 10 minutes, then lift out and finish cooling on a rack.

Notes

Store wrapped at room temperature for up to 3 days. Can be toasted for extra warmth. For freezing, wrap tightly in plastic and foil, keeping for up to 3 months.
