Preparation
- Preheat your oven to 350°F (175°C). Grease a 9 by 5 inch loaf pan or line it with parchment.
- In a mixing bowl, whisk the mashed bananas, egg, melted butter, sugars, and vanilla until well combined.
- In another bowl, stir together flour, baking soda, and salt. Add this dry mixture to the wet ingredients and fold gently with a spatula.
- Fold in optional add-ins if using.
- Pour into the prepared pan and smooth the top.
Baking
- Bake for 50 to 60 minutes, checking for doneness at 50 minutes. A toothpick should come out with just a few moist crumbs.
- Cool in the pan for 10 minutes, then lift out and finish cooling on a rack.
Notes
Store wrapped at room temperature for up to 3 days. Can be toasted for extra warmth. For freezing, wrap tightly in plastic and foil, keeping for up to 3 months.
