Ingrédients
  

Pasta and Base Ingredients
  • 8 ounces pasta Any shape you have on hand.
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, sliced
  • 1 cup cherry tomatoes or chopped veggies Substitute with any veggies available.
Finishing Touches
  • 1 handful greens, spinach or arugula Can omit if not available.
  • 1 teaspoon lemon zest or a splash of vinegar
  • 1 cup grated Parmesan or Pecorino Can use nutritional yeast for a dairy-free option.
  • to taste red pepper flakes, salt, and black pepper

Method
 

Cooking Pasta
  1. Boil the pasta in well-salted water. Scoop out a cup of that starchy water right before draining.
Preparing the Sauce
  1. In a skillet, warm the oil with garlic until it smells amazing.
  2. Toss in tomatoes or veggies and cook until soft and glossy.
Combining Ingredients
  1. Add the drained pasta to the skillet with a splash of the pasta water.
  2. Stir in cheese by the handful, adding more water as needed until it becomes a shiny sauce that coats every piece.
Finalizing the Dish
  1. Finish with greens, lemon zest, pepper flakes, and a squeeze of lemon juice if you like extra brightness.
  2. Taste and adjust salt and pepper. That’s it.

Notes

For added protein, stir in chickpeas, rotisserie chicken, or shrimp at the end. Add fresh herbs like basil or parsley for extra flavor.
